One of the best things about the cold is creating fun and delicious soup to warm you up while watching the snow fall. I made this soup a while ago and I love the flavors. It reminds me of Hawaiian pizza.
This is gluten free, dairy free and paleo!
Italian Sausage- about 1.5 lbs. I used the long one and cut it into pieces.
1 sweet onion- chopped
1 large can of diced tomatoes- drained
2 cans chopped pineapple- drained
2 cups spinach
48 ounces of chicken broth (about 1.5 boxes)
Salt and Pepper
Preheat skillet on medium heat
Add olive oil to heat
Cut sausage into bite size pieces
Cook until done all the way through
While sausage is cooking heat a large pot over medium heat.
add olive oil and chopped onions.
cook until onions are translucent.
Add chicken broth, Italian sausage, drained pineapple, and drained tomatoes.
Turn heat to high and bring it to a boil with the lid on.
Add thyme, salt and pepper. I added salt because my broth was low sodium.
Once at a boil turn to simmer with the lid on and let it cook for about 10-15 mins.
After about 10 minutes add the spinach and let that cook down about 5 mins.
Then serve and enjoy!
This will keep in the fridge for a few days.
