Coconut Muffins

I love baking and creating fun things to eat. Plus being gluten and dairy free I try to create and recreate recipes that fit my needs. I love paleo recipes and this is an adapted one that I really like. It is great with butter and honey!


1/2 cup of coconut flour
2 tsp of baking powder
3 eggs
1/3 cups of melted coconut oil
3 ripe bananas
nutmeg and cinnamon (optional)
you can also add nuts, chocolate chips or anything else you like in muffins

Preheat oven to 350

Add all ingredients to a food processor and pulse together


Transfer to a greased muffin pan (about 1/4 cup scoop in each)


Bake for 18-25 mins at 350 degrees or until golden color.


Enjoy with butter and honey!
